Red wine and sausage risotto is a home-style first course: few steps, one pan, a warm aromatic result that can stand alone. Soften the onion, brown crumbled sausage, toast the rice and deglaze with a good still red wine (in Piedmont a Barbera is a classic choice to drink at the table too). Cook with stock added a little at a time, then mantecare. Best eaten straight away; leftovers can be reheated in a pan or microwave — better still, cook only what you need. Simple, for everyone, with today’s ingredients: the spirit of recipes of yesteryear on Pianta.land.
Ingredients
Ingredients
Riso (Arborio o Carnaroli) — 320 g
Salsiccia — 300 g (privata del budello)
Brodo di carne — 1.5 l
Vino rosso fermo — 1 glass
Parmigiano — 40 g (grattugiato)
Cipolla — ½
Olio — 2 tbsp
Burro — 40 g
Sale — to taste
Method

Deglazed with a local Barbera — colour and aroma were excellent. A one-pan dinner with a salad.

Truly easy. Used Carnaroli and homemade stock: creamy just right.
